I really did give up on trying to make Paleo pancakes. Every recipe I tried did not work for me. I was fine with my Paleo waffles (lies I was telling myself). Well, this weekend I was doing some Spring cleaning in my room and I came across an old spiraled notebook. Inside this notebook was old recipes I’ve come across and written down to one day try out. Well, guess what was in my notebook?… Thats right, a recipe for paleo pancakes. This recipe was different from the ones I’ve come across and tried recently, so I decided to give it one more try. 5th times the charm right?? Heres the recipe:
1/2 cup almond butter
2 teaspoons of cinnamon
Combine ingredients in blender, mix well until you have batter
Grease skillet with coconut oil and pour batter making 3-4 inch pancakes
Cook until brown
*These brown very quickly so you gotta watch them carefully*
So I decided to try this recipe and OMG.. I made paleo pancakes!!!!
I did a lil dance of joy when I realized that I finally did it. I was so happy that I made enough to last me for a few days. Thank you to those who responded to my posts with words of encouragement to keep trying to make these dang pancakes. Now Im re-energized and focused on learning more paleo meals.
